Hey all my Anchored Beauties! After a month long hiatus I am back! I, unfortunately, went through some life changes which through me through a loop and I got all out of routine and I lost my path for a moment there. But, now, thankfully, everything has settled down again.
While my routine was lost so was my diet, unfortunately. I didn't go crazy and eat junk food all day every day. But, my meal plans were all out of whack, wasn't hungry and was very stressed out. A week after I was back on the job, (Yes I lost my job due to an unfortunate company lay off) I decided it was time to get back to clean eating. I needed to feel good about myself again.
I have pretty much gone back to the anti-inflammatory Diet that the nutritionist put me on. Breakfasts have consisted of Greek yogurt and fresh fruit, Veggie Fritatta or Gluten free oatmeal. Lunches have consisted of veggie patties and Rice from a local deli (it's delicious!) or my night before dinner left-overs, and lastly dinners have consisted of a meat and a veggie...and some times some brown rice or quinoa.
Although eating clean 6 days a week, I have decided to take football sundays as a cheat day. Not to go crazy, but to enjoy myself a little in the things I enjoy...mainly because it's football season and what do you have while watching the games? Cheese and crackers, Pasta and sauce, etc.

What have you made off a whim that was healthy, clean, delicious and full of delicious veggies? | My favorite thing I've made so far being back was the Veggie Fritatta. I have never made a fritatta before this and LOVED it. It started because I was on my way home from work and didn't really feel like cooking so I figured I'd have eggs. But, then, I didn't want scrambled, or sunny side up, or an omelet. I then called my mom and asked, "Is a fritatta hard to make?" She said no, and quickly & easily explained it to me. It was so easy because I had PLENTY of veggies in the fridge and plenty of eggs! I got home and took out a bunch of veggies: Asparagus, Onions, Mushrooms, and red bell peppers. I chopped all the veggies up through them in a frying pan and mixed them all together. I seasoned them with a little salt and pepper, as well as a tad bit of cayenne (Which I put on everything!) and then put the whisked eggs on top and ALMOST covered all the veggies. While I was doing the chopping I made some bacon to add to the top of the fritatta. I mean, who doesn't love Bacon?! and, It's Paleo (clean eating) friendly! (according to MOST.) and, I pre-heated the oven at 350. Once I chopped the bacon and put on top of the fritatta i put the frying pan into the oven for 35-45 minutes while checking. To know how it's done you shake the frying pan a little and if the center doesn't "Jiggle" then it's done! You cut slices like a pie and enjoy! I put the left overs in the refrigerator and had for breakfast the next few days. Honestly, each day was just as good as the last! I highly suggest making this on a Sunday for your breakfast Monday through Wednesday. |
