Ever have one of those days where you've worked all day and now it's time to go food shopping because you barely have anything in the house but you just don't want to? Yeah, I thought so - We all do! Well for me today was that day. I also didn't feel like ordering take out because honestly we did the last two nights (okay I've been a little lazy! But, stayed on track!) What did I Do? I made omelets.. But not you basic boring omelet. I raided my refrigerator and pulled out eggs, spinach, bell peppers, onions, bacon and sausage! Okay...that sounds "basic" but I did it differently and made it much more flavorful! Instead of making an omelet as you normally would I cooked up all the ingredients (besides the eggs) first. I sauteed but in VERY LITTLE OIL so it wasn't soggy when adding to the eggs the: Chopped Onion, Chopped Bell Peppers, & Spinach. As that was sauteing I cooked the bacon and sausage and upon completion I chopped them up! Next, I added the chopped sausage and bacon to the veggie saute just for about 30 seconds. Now, Time for the eggs. Crack, Whisk and pour into the pan! (duh!) Once the egg was pretty much cooked through (slowly) I poured some of the sauteed mixture over half of the omelet and then folded the top over. Believe it or not..it was delicious! Lots of veggies but also had that protein. Sure, it took a little longer but in my opinion was WAY WORTH IT rather than just throwing in the raw ingredients. It had more flavor!! Don't be afraid of just throwing things together because I can guarantee you can make something still healthy out of it and stay on track!! OH! And who doesn't love breakfast for dinner!! |
